One of the things I struggle with in my life is dinner. What does everyone want? What do I want? Will I have to go to the freaking grocery store to get something for what I’m being begged to make or what I’m craving like a pregnant woman?
A couple of days ago I text my husband and asked he wanted for dinner, and I told him it had to be “chicken something” because that’s what I got out of the freezer.
He was of absolutely no help.
So I had no clue what to do with it. I didn’t have the stuff I needed for certain things, I didn’t want to fry anything, and I really didn’t want to go to the commissary for anything. So I decided that I’d just make something up with what I already have.
It turned out to be something that everyone REALLY liked. So much so that my husband, who only ever eats leftovers of one thing (Unstuffed Shells) took both remaining pieces of chicken for lunch today and actually ended up eating them for breakfast because he couldn’t wait. *winky face*
It’s nothing fancy, but just in case you’re looking for something easy, here’s the made up recipe.
(Sorry I don’t have a picture– everyone ate everything, and it wasn’t until after dinner that my husband suggested I post the recipe! I’ll update with one as soon as I make it again.)
So I basically borrowed some things from Betty Crocker’s Oven-Baked Chicken recipe, and threw in the rest because it seemed yummy and sounded good. I didn’t measure anything I added, so these measurements are guess-timates. Just do what you think would work for your tastes.
4-5 Chicken breast halves
1/8 cup Grated Parmesan Cheese
4 Tblsp Garlic Salt
4 Tblsp Chili Powder
1/2 cup Bread Crumbs (I used Progresso Garlic & Herb)
3 Tblsp margarine or butter
- Put the butter into a 13×9 baking/casserole dish and place in the oven, melting the butter while you heat the oven to 475°F.
- Mix the dry ingredients in a bowl large enough to lay a chicken breast into flat.
- Rinse and loosely dry the chicken, then place it into the bowl to coat it with the dry ingredients.
- Place the chicken in the hot buttered dish.
- Bake for 15 minutes.
- Turn chicken over and bake for 15 minutes more.
At the end my chicken was nice and browned, without a thick bread coating. And it was a hit! I served it with saffron rice and green beans.
